How it Works - 3 Simple Steps

Buying beef in bulk shouldn’t be complicated. We keep the process simple, transparent, and easy to follow so you always know exactly what to expect.

1. Reserve Your Beef

Choose a Quarter, Half, or Whole and place your $500 per quarter non-refundable deposit. This secures your spot in our processing schedule — nothing else is due today.

2. We Process & Prepare

Your beef is harvested, weighed (hanging weight), aged for about 2 weeks, and professionally cut, packaged, and frozen by our trusted local butcher. Once we have the hanging weight, we send your final invoice based on our per-pound price. You pay your remaining balance about 2-3 weeks before delivery, or earlier if you wish.

3. Fill Your Freezer

When your order is ready, we meet you at our pre-arranged drop location on the designated date and time. Your beef comes fully frozen, labeled, and ready for long-term storage — giving you a freezer full of high-quality, ranch-raised beef.

*You must pick up on the pre-arranged day and time frame, or arrange for someone to pick up your order for you. We cannot store your meat outside the pickup time frame.

Buying bulk beef for the first time can feel confusing, especially with terms like “hanging weight” and “custom cuts” you may not hear every day. This FAQ is designed to make the process simple and transparent. Below, you’ll find clear answers about how ordering works, what you’ll receive, how much meat to expect, deposit details, delivery information, and everything else you need to know before reserving your beef.

What is bulk beef and how does the ordering process work?

When buying bulk beef, you purchase a quarter, half, or whole cow. Pricing is based on the hanging weight of the beef carcass (the weight after harvest but before cutting and trimming). You pay a deposit to reserve your share, and once the animal is processed, we invoice you for the remaining balance based on the final hanging weight.

What is hanging weight?

Hanging weight is the weight of the animal after it has been harvested, with the hide, head, organs, and lower legs removed. It is the industry standard used to calculate pricing. Once excess fat and bone are trimmed during processing, your finished packaged weight will be about 50–60% of the hanging weight.

Hanging weights can range anywhere between 650 to 950 pounds +/-.

How much meat will I actually receive?

Finished weight varies by animal, but general estimates are:

  • Quarter Beef: ~90–120 lbs, about 2 boxes
  • Half Beef: ~180–240 lbs, about 4 boxes
  • Whole Beef: ~360–480 lbs, about 8 boxes

All meat is cut, wrapped, frozen, and boxed.

If someone has more boxes/partial boxes of product than someone else at the time of delivery, it's likely because they bought a share of a much bigger cow. Everyone paid the same price per pound at your delivery location.

What is included in the standard quarter beef?

Quarter beef orders use our standard cutting plan, which includes a mix of the following possible cuts:

  • Ribeye, T-Bone, Sirloin, Filet
  • Round Steak or Cube Steak
  • Chuck Roast
  • Rump Roast
  • Lean Ground Beef (approx. 88–90% lean)

Standard cutting includes:

  • Steaks cut at ¾", 2 per package
  • Roasts 4–6 lbs each
  • Roughly 25% steaks, 25% roasts, 50% ground bee

Quarter beef orders are not eligible for any of the specialty cut packages. For this reason, we recommend at least a 1/2 cow order so you can get the full value of your purchase, and customize some options if you'd like.

Can I customize my cuts?

Yes — if you order a half or whole beef, you can choose from any of our cut options. Specialty options may include:

  • Brisket
  • Tri-tip
  • Prime rib roast
  • Larger quantity of ground beef if that’s more your style

Specialty cuts replace other cuts. For example, choosing a brisket means fewer roasts or less ground beef.

Are cut and wrap fees included?


Yes. All cut and wrap fees are included in our per-pound price. Some producers add these fees later — we do not. This includes normal kill fees, and all materials and labor related to processing your meat.

What is the deposit and how does payment work?

Deposits are required to reserve your beef:

  • $500 per quarter
  • $1,000 for a half
  • $2,000 for a whole

Deposits are non-refundable as your reservation triggers processing and the animal is harvested for your specific order. This process is not reversible.

After the butcher provides the hanging weight, we calculate your final total and invoice you for the balance. Final payment must be made before delivery or pickup. Weight varies by animal.

Grocery sales tax (3%) applies to your total.

How do I know when my order will be ready?

We will post the approximate delivery date for the current batch on the website.

Once processing is complete, we will notify you directly with:

  • Hanging weight
  • Final invoice
  • Exact delivery date and time (most deliveries will be on a Saturday, or the evening of a weekday on rare occasions)
  • Delivery location details
Where do you deliver?

We deliver to pickup locations in:

  • Southeast Idaho (Rexburg/Pocatello)
  • Salt Lake City/Sandy, UT
  • St. George, UT
  • Phoenix, AZ (limited quantities available each year due to shipping restrictions)

We do not ship direct to your home. Pickup is only available at specified central locations. Shipping options may be available at a future date.

How many beef shares available?

We list how many cows are available for the current ordering round directly on our website. Arizona orders are limited each year. Idaho and Utah (Salt Lake / St. George) are more flexible. We will do our best to keep our inventory up-to-date, but occasionally we sell out more quickly than we can update the inventory. Please email with questions any time.

Do you offer pork as well?

Yes, pork may be available in whole hog options. 1 whole hog will yield four-five 50 lb boxes of meat. Price will be by animal, not per pound. Contact us for more information.

How much freezer space will I need?

It will obviously vary based on the share you purchase, and the size of the cow you are assigned. Our family uses a chest freezer that has interior measurements of about 3' long x 1.5' wide x 2.5' deep, and we can comfortably fit 1/2 to 3/4 of a cow depending on the size of the cow.

What if I can't be at the pickup location on the specified date and time?

You must pick up your meat at the designated location, and within the designated time window, or arrange for someone to pick it up for you on that day. We are delivering frozen meat, and have no way to store large volumes of meat if your order is not picked up.
